The evolution of lunch

How did salads and sandwiches become the main lunch staple in the US? What do people in other countries usually eat for lunch? (McDonald’s and other Western chains are excluded.)
Malaysia - rice/noodles (various)
My guesses for:
Japan - noodles (various)

Korea - noodles (various)
Canada - salads and sandwiches
France - salads and sandwiches

Hmmm... might be a good coffee table book called “Lunch around the World”.
